Sizzling Mushroom Fajitas

Preheat the oven to 220°C. Place a large cast iron skillet in the oven to heat while you prepare the filling.

In a large frying pan, heat the olive oil over medium-high heat. Add the onions and peppers and cook for 5–7 minutes, until softened and starting to char at the edges.

Add the mushrooms and cook for a further 7–8 minutes, stirring occasionally, until golden and tender. The mushrooms should release their juices and then begin to brown.

Stir in the garlic, smoked paprika, cumin, coriander, and chilli flakes. Season with salt and pepper and cook for 2 more minutes.

Finish with a squeeze of lime juice and a handful of chopped fresh coriander. Remove from the heat.

Carefully remove the hot skillet from the oven and place it on a wooden board or heatproof mat.

Spoon the hot mushroom mixture into the sizzling skillet. Just before bringing it to the table, sprinkle a small amount of cold water over the edge of the pan to create a sizzle and steam effect.
