Rosemary syrup (makes 150 ml)

To make the rosemary syrup, combine the sugar, water and rosemary sprigs in a small saucepan. Warm over a low heat until the sugar has dissolved, then bring to a gentle simmer for 2 minutes. Remove from the heat and leave to infuse until completely cool. Strain into a bottle and refrigerate.

Pour the clementine juice into a jug or cocktail shaker. Add the rosemary syrup and a few ice cubes if you prefer the drink extra cold. Stir well.

Divide the mixture between glasses, filling each one-third to halfway. Top up with chilled prosecco or alcohol-free sparkling wine.

Add a small rosemary sprig to each glass for aroma and garnish. Serve immediately.
