Description

This vibrant seasonal cocktail brings together the sweetness of clementines, the herbal warmth of rosemary, and the sparkle of chilled fizz. It’s the perfect way to welcome guests and set a festive tone without requiring any last-minute prep. Both the citrus base and the rosemary syrup can be made several days ahead, allowing you to batch the drink and simply pour when it’s time to celebrate. Serve it in tall flutes for elegance or short tumblers for a more relaxed, family-style feel.

The combination of winter citrus and rosemary nods to traditional Christmas flavours while offering something brighter and more modern. It’s refreshing, lightly aromatic, and joyfully seasonal, everything a Christmas cocktail should be.

Ingredients

Rosemary syrup (makes 150 ml)

Instructions

  1. To make the rosemary syrup, combine the sugar, water and rosemary sprigs in a small saucepan. Warm over a low heat until the sugar has dissolved, then bring to a gentle simmer for 2 minutes. Remove from the heat and leave to infuse until completely cool. Strain into a bottle and refrigerate.
  2. Pour the clementine juice into a jug or cocktail shaker. Add the rosemary syrup and a few ice cubes if you prefer the drink extra cold. Stir well.
  3. Divide the mixture between glasses, filling each one-third to halfway. Top up with chilled prosecco or alcohol-free sparkling wine.
  4. Add a small rosemary sprig to each glass for aroma and garnish. Serve immediately.
