Whipped Lemon White Bean Crostini with Roasted Cherry Tomatoes

The whipped white beans are silky and bright with lemon, while the roasted cherry tomatoes bring sweetness and depth, making each bite balanced and satisfying. Perfect for Valentine’s Day, this canapé allows you to prepare most of the components in advance. The tomatoes can be roasted earlier in the day, the bean mixture whipped and chilled, leaving only the final assembly to do once the candles are lit and the drinks are poured.

Preheat the oven to 180°C.

Place the cherry tomatoes on a small roasting tray, drizzle with olive oil, scatter over the thyme, season with salt and pepper, and roast for 20–25 minutes until soft, blistered and slightly caramelised. Set aside to cool.

While the tomatoes roast, place the cannellini beans, olive oil, lemon zest, lemon juice and garlic into a food processor. Blend until completely smooth and creamy, scraping down the sides as needed. Season to taste and chill until ready to use.

Lightly brush the bread slices with olive oil and toast under the grill or in a hot pan until golden and crisp on both sides.

To assemble, spread a generous layer of whipped white bean mixture over each crostini.

Top with a few roasted cherry tomatoes and a little of their roasting juices.

Finish with a light crack of black pepper and serve.
