Toast the oats in a dry frying pan over a medium heat for 3–4 minutes, stirring frequently, until lightly golden and nutty. Remove from the heat and allow to cool completely.

Whip the chilled oat cream in a bowl until softly thickened and spoonable. Do not overwhip.

Gently fold the maple syrup, vanilla extract and whisky into the whipped cream, tasting and adjusting sweetness or whisky to preference.

Lightly crush half of the raspberries with a fork, leaving the rest whole for texture.

To assemble, either gently fold the oats and raspberries through the cream for a rustic finish, or layer cream, raspberries and oats in glasses for a more traditional presentation.

Chill briefly or serve immediately, finishing with a few whole raspberries on top.
