This vibrant, punchy canapé is inspired by The Three Caballeros, a film bursting with colour, music, and the festive spirit of Latin America. The trio of Donald Duck, José Carioca, and Panchito Pistoles travel through Mexico and Brazil, where food, song, and celebration go hand in hand. These tostada cups reflect that joyful energy with their bold flavours, bright colours, and playful presentation.
Just like the film, this dish embraces variety and flair. The smoky black bean base, creamy avocado, and zippy pickled onions mirror the film’s dynamic mix of cultural influences. As one of your opening bites, it invites your guests to dive into a feast full of rhythm, richness, and unexpected surprises.

Preheat the oven to 180°C (fan) / 200°C / Gas 6. Lightly grease a mini muffin tin.

Brush each tortilla lightly with olive oil and cut into quarters. Press each quarter gently into the holes of the muffin tin to form a cup shape. Bake for 10–12 minutes, or until crisp and golden. Let cool.

While the cups are baking, prepare the pickled onion. In a small bowl, mix the vinegar, sugar, and salt. Add the sliced red onion and toss well. Set aside to pickle.

To make the black bean purée, blend the beans, garlic, lime juice, cumin, salt, and pepper in a food processor until smooth. Add a splash of water if needed for a smooth consistency.

To assemble, spoon a little black bean purée into each tortilla cup. Top with diced avocado and a few slivers of pickled onion. Garnish with fresh coriander.
