Smoky Sweet Potato Skewers with Maple Mustard Glaze

Preheat the oven to 200°C (fan 180°C). Line a baking tray with parchment paper.

Toss the sweet potato cubes in olive oil, smoked paprika, sea salt, and black pepper until evenly coated. Spread them out on the tray in a single layer.

Roast for 20–25 minutes, turning halfway, until golden and slightly crisp at the edges.

While the sweet potatoes roast, whisk together the glaze ingredients in a small bowl until smooth.

When the sweet potatoes are cooked, remove them from the oven and brush generously with the glaze. Return to the oven for 3–4 minutes to allow the glaze to caramelise slightly.

Thread the glazed cubes onto small skewers or cocktail sticks (two to three pieces per skewer). Sprinkle with a few thyme leaves and a pinch of chilli flakes if using.

Serve warm on a platter or wooden board.
