  1. Preheat the oven to 190°C.
  2. Trim and scrub the beetroot, wrap them loosely in foil, place on a baking tray and roast for 40–45 minutes, or until tender when pierced with a knife.
  3. Remove from the oven, allow to cool slightly, then peel away the skins and slice the beetroot thinly.
  4. Using a sharp knife, peel the oranges, removing all the pith, then slice into thin rounds.
  5. Arrange the beetroot and orange slices on a serving plate, overlapping slightly in a loose, carpaccio-style pattern.
  6. Drizzle with extra virgin olive oil and balsamic vinegar, then season lightly with salt and black pepper.
  7. Scatter over the chopped pistachios and herbs, if using.
  8. Serve immediately, or chill briefly and bring back to room temperature before serving.
