Heat the coconut oil in a large saucepan over medium heat. Add the chopped onion and cook for 5–7 minutes until softened.

Add the garlic, chilli (if using), and diced potato. Cook for another 2–3 minutes, stirring occasionally.

Pour in the vegetable stock and bring to a gentle boil. Simmer for 10–12 minutes or until the potatoes are tender.

Add the coconut milk and sweetcorn. Simmer for a further 5 minutes.

Use a stick blender to blend about half of the soup in the pan, leaving some texture. Alternatively, transfer half to a blender, purée, and return it to the pot.

Stir in the lime juice and chopped coriander. Season with salt and pepper to taste.

Ladle into bowls and garnish with extra coriander and a drizzle of coconut milk, if desired.
