Description

These almonds are a small but indulgent addition to the table, glossy, rich, and just a little bit dangerous. The bitterness of dark chocolate, the gentle heat of chilli, and the deep toasty flavour of the almonds make them feel grown-up and intentional, rather than sweet or snacky. They’re perfect for grazing between sips of a cocktail, encouraging conversation to linger rather than moving things along too quickly.

They are also very easy to prepare. Made well ahead of time and stored until needed, they’re the kind of nibble you can scatter into a small bowl just before serving, instantly elevating the table without adding any pressure on the night.

  1. Preheat the oven to 180°C.
  2. Spread the almonds out on a baking tray, drizzle lightly with olive oil, and toss with smoked paprika, chilli flakes and sea salt.
  3. Roast for 12–15 minutes, shaking the tray halfway through, until the almonds are golden and fragrant. Remove from the oven and allow to cool slightly.
  4. Melt the dark chocolate gently in a heatproof bowl set over a pan of barely simmering water, stirring until smooth.
  5. Add the warm almonds to the melted chocolate and stir until evenly coated.
  6. Spread the almonds back out onto the baking tray or onto baking paper, separating them slightly.
  7. Allow to cool completely at room temperature until the chocolate has set.
  8. Store in an airtight container until ready to serve.
