Charring the sprouts gives them a smoky, caramelised depth, while lemon zest lifts the flavour and toasted almonds add crunch and warmth. It’s a simple, modern take on a classic festive vegetable.

Prep the sprouts the day before and finish them in minutes, making this one of the most effortless sides on the Christmas table.

Ingredients
  • 500 g Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 1 zest of 1 lemon
  • 30 g flaked almonds
  • Salt and pepper, to taste
Instructions

    Heat the olive oil in a large frying pan over medium-high heat. Add the halved Brussels sprouts cut-side down and cook without stirring for 3–4 minutes, or until deeply golden and charred.

    Flip the sprouts and continue cooking for another 3–4 minutes until tender but still bright green. Season with salt and pepper.

    Add the flaked almonds and cook for 1–2 minutes more, toasting them lightly.

    Remove from the heat and grate over the lemon zest. Toss gently to combine.

    Serve immediately or reheat in a hot pan for a minute before serving.
