Designed to capture the magic of a candlelit table by the waves, it blends tropical brightness, Indian spice, and the slow, romantic pace of island dining. Every dish is rooted in the flavours we experienced, reimagined for a home kitchen without losing the elegance or indulgence of that moment.

From crisp papaya-topped coconut tapioca to smoky samosas, from cooling cucumber soup to grilled jackfruit skewers, spiced tofu stew, and a chocolate–coffee finale, each course is a step deeper into that Maldivian night. Canapés

Papaya & Lime Chutney on Coconut Tapioca Crisp – A tropical bite to begin: tangy, sweet papaya chutney atop a crisp made from coconut and tapioca, light and vibrant.

Starter

Smoked Aubergine & Tomato Samosa with Coriander Coconut Cream – A flaky pastry filled with warm spices, smoky aubergine, and rich tomato, served with a drizzle of cool coconut cream infused with fresh coriander.

Soup Course

Chilled Cucumber & Coconut Soup with Pickled Shallots – Cool and refreshing, this elegant soup blends coconut and cucumber with a delicate tang from house-pickled shallots.

Main Course

Grilled Jackfruit & Plantain Skewers with Tamarind Glaze and Coconut Pilaf – Charred, spice-marinated jackfruit and plantain skewers, brushed with a tamarind glaze and served over fluffy coconut pilaf.

Spiced Tofu Maldivian Curry Leaf Stew with Paratha – A comforting, island-inspired stew featuring tofu in a coconut milk base infused with curry leaves, fenugreek, and cardamom. Paired with flaky, pan-fried paratha.
