This classic side adds festive colour and rich, tangy-sweet flavour to your Thanksgiving spread. Red cabbage is slowly braised with apples, onions, and balsamic vinegar until meltingly tender.

The result is vibrant, flavourful, and deeply warming, the perfect contrast to roasted vegetables and savoury dishes. This dish also holds up beautifully if made ahead and gently reheated, making it an ideal addition to a busy holiday menu.

Ingredients
  • 400 g red cabbage, finely sliced
  • 1 large apple, peeled and grated or thinly sliced
  • 1 medium red onion, finely sliced
  • 2 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 2 tbsp maple syrup
  • 0.5 tsp ground allspice or cinnamon
  • salt and black pepper ((to taste))
  • 4 tbsp water
Instructions

    Heat the olive oil in a large saucepan over medium heat. Add the sliced onion and cook for 5 minutes until softened.

    Add the red cabbage and apple to the pan. Stir well to combine.

    Pour in the balsamic vinegar, maple syrup, allspice (or cinnamon), water, and a pinch of salt and pepper. Stir again.

    Cover with a lid and simmer on low heat for 35–45 minutes, stirring occasionally, until the cabbage is soft and the flavours have melded. Add a splash of water if it starts to dry out.
