Description

These truffles are a mischievous nod to the iconic poisoned apple in Snow White and the Seven Dwarfs, but rest assured, they’re nothing but indulgent. Dark chocolate and apple come together in a rich, silky ganache that’s mysterious, decadent, and a little bit magical. Rolled in cocoa or shimmer dust, they’re tiny jewels of temptation.

The tale’s contrast between innocence and danger is echoed in these sweet bites. Just as Snow White found sweetness even in the darkest of forests, these truffles offer a satisfying close to the evening: something rich, memorable, and worth lingering over as the final spell of the night takes hold.

Ingredients
  • 150 g dark chocolate (70% cocoa)
  • 100 ml full-fat coconut milk
  • 2 tbsp apple compote or apple purée
  • 1 tbsp maple syrup (optional, depending on sweetness of compote)
  • 0.5 tsp ground cinnamon (optional)
  • Pinch of sea salt
  • For coating:
  • 2 tbsp cocoa powder, sifted
  • Optional: edible red shimmer dust or glitter for decoration
Instructions
  1. 1
Place the chopped chocolate in a heatproof bowl.
  2. 2
In a small saucepan, heat the coconut milk until just simmering. Pour it over the chocolate and let it sit for 2 minutes to melt.
  3. 3
Stir gently until the chocolate is fully melted and smooth. Add the apple compote, maple syrup (if using), cinnamon (if using), and a pinch of salt. Mix until well combined.
  4. 4
Cover and refrigerate the ganache for at least 1 hour, or until firm enough to scoop.
  5. 5
Use a teaspoon or melon baller to scoop out small portions and roll into balls with your hands (dampen your palms slightly if needed).
  6. 6
Roll the truffles in cocoa powder to coat. For a magical look, dust lightly with edible shimmer dust.
  7. 7
Store in the fridge in an airtight container until ready to serve. Bring to room temperature for 10 minutes before enjoying.
