Description

These elegant little tartlets are inspired by the grand, enchanted feast in Beauty and the Beast. The film’s most iconic culinary moment, the song “Be Our Guest,” invites Belle into a world where even the appetisers are charming and full of personality. This dish nods to that scene, embracing the rustic French countryside setting with layers of roasted vegetables and fragrant herbs—quintessentially Provençal and joyfully theatrical in presentation.

Ratatouille also symbolises Belle’s transformation from outsider to guest, mirroring how something simple and humble can become something special with care and creativity. Just like the enchanted objects of the castle, these tartlets are small but bursting with warmth and welcome, ideal for setting the tone at the beginning of a magical, storybook meal.

Ingredients
    For the herb pastry:
  • 200 g plain flour
  • 100 g block butter, cold and cubed
  • 1 tbsp mixed dried herbs ((thyme, oregano, rosemary))
  • 0.25 tsp salt
  • 2 tbsp cold water
    • For the filling:
  • 0.5 small aubergine, finely diced
  • 0.5 courgette, finely diced
  • 0-5 red pepper, finely diced
  • 0.5 yellow pepper, finely diced
  • 2 tbsp olive oil
  • 2 tbsp tomato purée
  • 1 tsp fresh thyme leaves
  • Salt and black pepper ((to taste))

    Preheat the oven to 180°C (fan) / 200°C / Gas 6. Lightly grease a 24-hole mini muffin tin.

    To make the pastry, place the flour, herbs, and salt into a mixing bowl. Add the butter and rub it in with your fingertips until the mixture resembles breadcrumbs. Add cold water a tablespoon at a time, mixing until it comes together into a firm dough. Wrap and chill for 15 minutes.

    Meanwhile, prepare the filling. Heat the olive oil in a frying pan over medium heat. Add the aubergine, courgette, and peppers. Cook for about 10–12 minutes, stirring often, until the vegetables are softened and lightly caramelised. Stir in the tomato purée, thyme, salt, and pepper. Cook for another 2 minutes, then remove from heat.

    Roll out the chilled pastry on a floured surface to about 2 mm thick. Cut out circles large enough to line your mini muffin tin holes (approx. 6–7 cm). Press each circle into a hole, trimming if needed.

    Spoon a teaspoon of the filling into each pastry case. Bake for 20–25 minutes until the pastry is golden and crisp.

    Allow to cool slightly before removing from the tin. Serve warm or at room temperature.
